This recipe is ideal if you feel like having a slightly more special lunch, but don't want to spend hours in the kitchen. Daniela gave us a recipe that looks like your good old grilled sandwinch, but just a bit different. Because the sandwich with bean spread and grilled cheese is topped with "Pico de gallo", you really feel like you're in Mexico. Pico de gallo is a mixture of finely chopped red onion, tomatoes, lime and jalapeno peppers. We added a big pile of fresh cilantro, but if you don't like it, you can of course leave it out.

Preparation method
Preparation:
Preheat the oven to 180 degrees
If necessary, bake the pistolet as indicated on the packaging
Step 1: Prepare pico de gallo (mixture of sliced tomatoes and onion)
Cut the red onion and tomatoes, coriander and jalapeno pepper into small pieces
Squeeze the lime over the mixture and mix together
Step 2: Make the Molletes
Cut the buns in half and spread with a layer of refried beans
Add some cheese.
Place the buns in the oven for about 10 minutes or until the cheese has melted and is slightly crispy.
Add the pico de gallo and serve.
