The fifth taste ‘umami’

Do you know that rich, savory flavour that lingers after eating something like tomato sauce, long-cooked stews, or ketchup? That's umami. Here's a little experiment you can do to discover this flavor: take a sun-dried tomato and chew it 20 times before swallowing it. You taste something sweet and sour. But a savory flavor will cover your tongue and last a long time. That is umami.
